WORK IT with your hands - this part is important - it liberates a lot of juice that the kraut ferments in. Min 5 minutes of kneading.

Then place a whole cabbage leaf over the top of the shreds and use some kind of weight or spring thing to hold the cabbage below the surface of the liquid (this is important b/c otherwise you get mold). I use these www.ballmasonjars.com... they work great but you can improvise.

WORK IT with your hands - this part is important - it liberates a lot of juice that the kraut ferments in. Min 5 minutes of kneading.

Then place a whole cabbage leaf over the top of the shreds and use some kind of weight or spring thing to hold the cabbage below the surface of the liquid (this is important b/c otherwise you get mold). I use these www.ballmasonjars.com... they work great but you can improvise.
