The regular "baking potatoes" with the rough, light brown skin (as opposed to a waxy skin like a red or yellow potato) are russets. They may also be known as Idaho potatoes.

What became the russet potato was first grown by Massachusetts-born botanist Luther Burbank in the late 19th century, in response to the Irish potato famine. Later, a variation developed the characteristic rough, red-brown -- that is, "russeted" -- skin of the so-called Burbank Russet potato, the floury, slow-growing, blight-resistant potato chip potato of choice. The more you know, the more you crunch!
