@revrabbit: I season with salt right after it gets out of the oil, then add it to whatever sauce I have on hand. Today its thai red curry (jarred) which I will modify with some of my own seasonings and veggies.
I ate the burnt toast, it was still good (mom's easter bread). the tofu is for my wife's dinner because I won't be home.

...Stuff I love called Bragg Amino Acid outta Santa Barbara, CA where I lived: It's soy w/out the sweet stuff - just soy actually, almost a boullion flavor - I use it instead of salt on everything when ya gotta sodium up...

This weekend I marinated my tofu w/ salsa verde, vegan steak sauce & Worcestershire sauce, w salt & pepper, a little cumin, and a sneeze of coriander. Then I fried it as a crumble.

well, I just get the box of vital wheat gluten, mix it with veggie broth and some spices, boil it up with veggies, broth. Then you can eat or fry it up. I use it in tacos these days.

if u mix red miso with sake and sugar (and maybe mirin, too) and heat it to cook off the alcohol, u get a sauce that ca be used as a marinade and glaze.

I've also heard that you can coat a block of tofu with miso and let it "age" in the fridge for a few weeks (I think) and this transforms it into a substitute for blue-cheese.

They have their purposes. Hot sake is great in the winter with noodles. Cold sake is great with sashimi and sushi. if you are cheap, drink hot sake - I've gotten refills for being nice to staff and going "let the chef go crazy" when ordering.

Parq - Thanks for the recommendation. I visited Mt Rainier in 1985 and would love to see it again. Also, Mt St Helens. It was barren, ashy and muddy when I last saw it. The Rainier Beer billboards made a serious impression on me too as a 12 year old.
