All I do is make a veggie broth with the frozen bits and ends from veg that I save in the freezer(celery/carrot/peppers/onion etc.), Then I add some peppercorns, a cinnamon stick, ginger and a few star anise seeds. then it's like miso, you just strain and ladle the broth into bowls and add your toppings (pre-cooked noodles, green onions, carrots, bamboo shoots, water chestnuts, mushrooms, cilantro, japapeno slices)
