Beef tongue is very tasty if it is in a tongue burrito or tongue taco, or a sandwich from an Italian Deli. I tried cooking beef tongue once and it was a miserable failure.

In 1992 my wife and I saw Charlie Watts' tribute to Charlie Parker at the Blue Note with a small jazz band that included Dave Green, and Watts never looked so happy--especially when mouthing the words to "Laura" as they played it. They added a live string section for a "Parker with Strings" segment of the tribute, so hearing that live was a real treat.
