Cooking & listening is hazardous.
That said, mushrooms sauteed in butter, beef tallow, thyme & a wee bit of cumin seed are the *bomb*. Gouda has been grated.
Currently slow-steaming minced broccoli florets & hunks of kale, and toasting hazelnuts. Dang this lunch is labor intensive!

@UM - first step - do NOT try the ubiquitous bagged kale available in all supermarkets, TJs, Costco, etc. It's nasty, bitter, and foul (and usually laden w pesticides). Wait till you can try some really fresh locally grown varieties - the difference is astonishing. Also, lacintino (aka dinosaur) kale is milder, has an easier texture to appreciate if you're not a greens fiend, and in fact can be used as a wrap.

Plain are great. Smoked paprika even better. Dried coconut and curry spices best! Only problem is the chips loss crunch if you look at them funny, so only make what you'll eat in 1 sitting. Which is more than you think...
