Not sure what collards are but if they are like cabbage; garlic, rosemary & pancetta fried in olive oil; add torn up cabbage, later peas and vegetable stock. Cook for ten minutes or so. Add large knob of butter.

I prefer simple steaming for collards or a sauté that's been started with piles of minced ginger. Lime-tamari sauce with toasted sesame oil.

collards you can do with smoked turkey. My Alabaman ex -worker always made them with at least one other green (can be even cabbage), and had you top them with a vinegar salad of cucumbers, onion and tomatoes to your taste.
