It’s not that easy
Companies have multiple IP addresses and will send you spam via several addresses. Many of them get through the spam filter and then you have to click a link to their website for you to unsubscribe from something you never subscribed to,

@Peter A normal email sent between any user and a gmail user will be visible by Google. I believe their terms of service grant them the ability to scan the messages. So they shouldn't have your entire collection of email, but may be able to track some information about your email as the sender. Also, Jason Fried mentioned that Hey will block trackers, meaning Google and other companies will gain less or no information when you open emails containing trackers.
